Tomatoes ripening

A tomato can sit on the vine for days, full sized and beautifully green, while a gardener begins to suspect betrayal. It is not a lack of sunshine. It is not necessarily a lack of fertilizer. A red tomato becomes red through a remarkably particular set of chemical changes, and hot weather can put those changes on hold.

(For this article, “tomato” means a variety that normally ripens red. Yellow, orange, purple and green-when-ripe tomatoes are playing by different visual rules.)

1. Green does not always mean immature in red tomatoes

Tomatoes spend a surprisingly long time green. First they are growing fruit, seeds and gel around the seeds. Only after the fruit reaches what horticulturists call the mature-green stage can it launch its ripening programme, whether it remains on the plant or is picked.

That stage is harder to spot than it sounds. Full size, firm flesh and a slightly lighter, shinier green are useful clues, but not guarantees. In actual fact, a tomato is mature green wh the seeds inside are fully formed, but you can’t tell that without cutting into it. The practical rule is pleasantly simple: if there is no frost, disease or other urgent reason to harvest, leave a firm green tomato on the plant until it shows its first blush of colour.

2. Tomatoes have different temperatures for different jobs

Tomato weather is not one thing. The temperatures that allow flowers to set fruit are not quite the same as those that let a tomato build its red colour. Days around 21 to 29 Celsius generally suit flowering and fruit set, while moderate warmth, roughly 20 to 25 Celsius, is especially favourable for colour development.

This explains one of the season’s stranger sights: a tomato plant can look exuberant, produce new leaves and hold a fine crop, yet seem to have stopped ripening altogether. The plant and the fruit are simply doing different jobs with different temperature preferences.

3. Red is only one part of ripening

The first shift from green to yellow, pink, orange or red is called the breaker stage. It signals that ethylene, a natural plant hormone, has begun coordinating a cascade of changes in texture, aroma, acids, sugars and pigments.

The red colour is only the showiest part. Chlorophyll fades, while carotenoid pigments accumulate. Lycopene supplies the familiar red of most tomatoes, and other carotenoids help create yellow and orange tones. In other words, the tomato is not simply applying red paint.

4. Heat can leave tomatoes green or orange

High temperatures interfere particularly with lycopene production. Once conditions are regularly above about 29 Celsius, red colour development can slow. Around 32 Celsius and above, it may be strongly inhibited.

The result can be a row of tomatoes that seem frozen in green, or fruit that goes a perplexing yellowish orange instead of red. This does not mean the fruit has been spoiled. It means the colour-making machinery is waiting for a cooler shift.

5. The fruit can be hotter than the weather report

The forecast tells you the air temperature, not the temperature of a tomato’s skin in direct afternoon sun. In a field study, exposed tomatoes were much warmer than shaded ones, and fruit-surface temperature predicted lycopene content better than air temperature did.

That makes the foliage around a cluster more than scenery. It is a little sun hat for the fruit. When heat is the problem, stripping away healthy leaves to expose tomatoes can work against the very colour change you are trying to encourage.

6. Heat affects flowers, young fruit and mature fruit differently

A tomato flower, a pea-sized tomato and a mature-green tomato are not facing the same heat challenge. Prolonged heat can reduce pollen viability, so fewer new flowers set fruit. Very young tomatoes may grow more slowly and, under severe stress, may drop.

A tomato that has already reached mature green is in the best position to wait out the weather. It can stay on the plant through a hot spell and begin to colour when conditions become more moderate.

7. Warm nights make heat spells harder on tomatoes

One hot afternoon is not necessarily a tomato crisis. A run of hot days followed by warm nights is more consequential, especially while the plant is flowering. Sustained high day and night temperatures can impair pollen development and reduce fruit set.

There is no particular temperature at which every tomato suddenly stops ripening. Variety, the length of the heat spell, soil moisture, fruit exposure and overnight temperatures all change the outcome. The weather is a pattern, not a single number.

8. Water steadily, but do not expect water to solve everything

A tomato with dry roots has less ability to cope with heat, so maintaining suitable moisture in the root zone matters. Containers deserve extra vigilance because their growing medium can heat and dry with alarming speed.

But watering is not a rewind button. It cannot restore pollen damaged by heat or force an overheated tomato to make lycopene. It can, however, prevent drought stress from occurring and making a difficult week for your tomato even worse.

9. Prune thoughtfully

Removing diseased or worn-out lower leaves can be sensible, and commercial greenhouse growers often remove older leaves as part of managing a dense crop. Removing some older leaves does not necessarily reduce the crop, provided the plant still has plenty of healthy leaves.

The question is what happens to the fruit left behind. Do not suddenly expose green tomatoes to fierce afternoon sun during a heat wave, particularly on a plant with a thin canopy. In very hot, sunny weather, the leaves act as part of ripening management.

10. Mature fruit can finish ripening indoors

A tomato that has reached breaker stage will finish ripening readily on the kitchen counter. Fully developed mature-green fruit often can as well, but it is harder to identify that stage from the outside. A tomato picked while still immature may soften, but it is unlikely to ripen normally.

Harvesting fruit can be sensible before frost, prolonged heat, heavy rain or a run of cold weather. Keep tomatoes in a single layer at ordinary room temperature, out of direct sun.

The good news is that heat-delayed ripening is usually a pause, not a failure. A cooler stretch of weather can set the whole process in motion again, and a vine that looked stubbornly green can suddenly seem to turn red overnight.
